Rear lift question. Please Help

It's just that simple. Took me less than 30 minutes to install them.

Leave the rear tires on. Their weight actually helps hold the spring in position.
Installation is relatively easy:
1) Use floor jack under rear pumpkin and jack back end of truck up until both rear wheels are approx. 5" off the ground
2) Place jack stands under frame just before rear tire, I placed them under the front spring mounts
3) Lower truck to rest on the jack stands. Tires should still be off of the ground at least 1"
4) Starting on one side, remove the lower bolt from the old shackle. Removing the bolts is the hardest part of the whole changeover. I used an air impact to push it out, but a good steel rod and a Big Hammer should do it too.
The spring WILL move on you but that's OK. You'll deal with that later.
5) Remove the upper bolt and old shackle.
6) Attach new Samco shackle to the spring end thru the lower hole, holding the shackle flat towards the rear. Just snug the nut at this point.
7) Using a small bottle jack, spread the spring from the frame until you can swing the shackle up into position and get the top bolt in.
8) Tighten both bolts to 63 ft. lbs.
9) Repeat procedure on other side.
End Result:

I went with the 1.25" rear lift and my front end is leveled with 35" Goodyear MTR's. Looks like most people go with the 1/2 inch rear lift. Is it recommended to add extended shocks or anything else after this modification?

I don't understand what you are saying that you are only getting 1.25" of lift with a 2" lift. I have lifted jeeps, rangers and a few others and whatever the lift was, either 2,4, or 6" that's exactly how high it lifted all of those vehicles.

The spring is pivoting on the front mount. That dimension doesn't change.
Adding a shackle extension to the rear mount increases the rear mounting dimension only.
The rear axle is approx. in the middle of the spring and increases roughly 1/2 the distance that the rear mounting point does.
In my case a 2" longer shackle increased the height at the rear axle approx. 1".
