That's not really an H3 specific problem... every car I've ever driven in has done that to some extent.
But to answer your question, getting fender extensions (i.e. they stick out further from the truck) would help. Driving slower through puddles would help too.
Personally, I've always enjoyed spraying everything when I go through a puddle.

Performance loss:
Biggest difference is can tell it takes me a couple extra feet to stop when I hit the brakes... I'm not a tailgating kind of guy, so that doesn't botehr me too much, but I do keep it in mind.
I Accelerate a bit slower as well... but the new tires didn't effect my acceleration as much as the 6oo pounds of gear I've added.
As far as wandering on the road or handling difference goes:
I can't tell any difference in how it handles. It is a pretty stiff tire, there is no "squishy" feeling.
Hydroplaning:
I have not had a problem. Part of why I picked these tires is that they had gotten really good reviews for performance on wet / snowy roads. I've obviously not gotten in snow or ice yet, but as far as driving in the rain goes, they feel like my factory 33" AT's did.
They are great tires, I've put 1000 miles on the truck since installing them. No complaints.
