I am like you and love the look of bigger rims! But to maintain the functionality of being an off road vehicle I wouldn't go larger than an 18 rim. You can oversize the tire and it will protect your pretty rims on an 18 but any larger than that and any rock or log will leave you in tears!
There is an H3 here that has 18's and probably running 285/60r/18 tires. It looks awesome, makes the vehicle look more proportionate IMO. They are not offset rims so the tires barely stick out from the well yet are wide (probably 12" wide). Whether or not that person experiences tire rub at full turn would be another question im not sure about due to the width of the tire. Look like they were running Toyo Mud grapplers so I can imagine they were loud but damn it looked great and if you got those in an E rated tire they would last FOREVER! Just my two cents!
